Watermelon Salsa Recipe

Ingredients

• 1 1/2 – 2 cups Watermelon, seeded and cut into small cubes
• Freshly squeezed Juice of 1 Lime
• 1 Tomato
• 1/2 Red Bell Pepper, cored and finely chopped
• 1 clove Garlic, minced
• 1/2 small Onion, finely chopped
• 1 bunch Green Onions, chopped
• 1 bunch Coriander, chopped
• Salt and freshly ground Black Pepper, to taste
• 1 Jalapeño Pepper, seeded, ribbed and chopped

Directions

1. In a large bowl, combine watermelon cubes, bell pepper, garlic and onion. Mix gently but well.
2. Add green onions, cilantro and jalapeño to the mix.
3. Season with salt, pepper and lime juice. Gently mix well to combine.
4. Refrigerate for at least 3 hours or preferably overnight.
